Braised Red Cabbage - Cook From Fresh - Gluten Free Cooking

I love Braised Red Cabbage and cooked this way means it is always on the table at Christmas – I also had it yesterday for St Michalmas day with a roast goose.

The cabbage freezes well / can be cooked the day before you want it so it really is useful for those days when you are cooking a feast so you can get ahead of yourself (like Christmas day) – just pop it in the microwave to warm it up again.

Braised Red Cabbage Ingredients

1 Red Cabbage – roughly sliced / diced
2oz butter
75ml red wine vinegar
35ml Balsamic vinegar
50ml water
2 eating apples peeled cored and diced
1 onion finely sliced
2 cloves garlic finely sliced
1 cinnamon stick
½ tsp mixed spice
Twist of black pepper and a pinch of fresh ground nutmeg

In a good heavy oven dish that has a lid lightly fry the onion in half of the butter until softened, turn up the heat and add the diced apples, balsamic vinegar and the stick of cinnamon and fry for 1-2 mins. Remove from heat and add all the other ingredients except the remaining portion of butter and give it all a good mix up – then dot the butter on top.
Put the lid on the dish and pop it in the oven for a couple of hours at 150-60C or depending on what else you have in the oven you can cook it at a higher temp for a lower time (it really is a forgiving dish!)
