Gammon and Pea soup - Cook From Fresh - Gluten Free Cooking

Although this Gammon and Pea Soup is a super quick and easy soup to make you would have needed to have made the Roast Gammon and Parsley sauce  recently to have the base stock and left over gammon for this dish:

375ml gammon stock from my Roast Gammon and Parsley sauce dish

500ml light veg stock

250g of fresh peas

Left over gammon from my Roast Gammon and Parsley sauce dish

small pot of cream

1 small onion – finely diced

1 small clove of garlic crushed

1/2 oz butter


How to cook Gammon and Pea Soup

Fry the onion in the butter with the gammon bits until the onion is softened, add the garlic and the peas and cook for 2 mins more. Then add the stock and bring to the boil, turn off the heat, stir in the cream, season to taste with a twist of black pepper (doubt very much that you would need any salt) and then serve.
