Halloween Pukin pumpkins are a great Halloween party idea. It is so easy to make this yummy red hummus and have it it flowing out of a carved pumpkins mouth into a dish on the table –  and then all you need to do is just add the usual chips, carrot sticks etc for guests to tuck in with.



Halloween Pukin pumpkins

4 beetroot (pre cooked but not the pickled ones!)

200g  cooked chickpeas

3 tablespoons tahini

60ml water

120ml olive oil (about)

Black pepper

1/2 – 3/4 teaspoon ground cumin

2-3 cloves garlic, (crushed)

about 2 tablespoons lemon juice


Chuck the chickpeas, garlic, tahini and the beetroot into a food processor and give it a good blitz. Then add the water, cumin and lemon juice and turn the blender back on and pour the olive oil in processing it until smooth and thick (you might not need to use all the oil – you might need a bit more). Give it a taste and add adjust if required. (I usually add another clove of garlic.)
