I remember my mum making this home-made lemonade every summer and I absolutely loved it. The sharp acidic tang of fresh lemons is offset by just enough sugar to make this the perfect taste of summer.

Home-made lemonade Ingredients

6 large fresh lemons
1 lb Sugar

 

Method

Peel 6 large lemons – put the peel in a bowl with 1 lb of sugar pour on 2 pints of boiling water – leave over night to steep

Juice lemons and keep the juice in a fridge overnight

Remove the peel from the sweet lemon water,  add the reserved lemon juice and bottle.

To Serve

Mix 60-40 (ish) with still or sparkling spring water or dilute to suit your taste-buds with lots of ice and a sprig of fresh mint.

For variations remove 1 lemon and add either a couple of limes to the above recipe or add 4 Clementine’s (and use about 0.8lb sugar)
