Slow roasted Beef on Wasabi pea crush is a super easy dish to prepare – great for days when you are pottering around the house and have the time for the slow roast. Just remember to turn the beef each time hour or so .
Slow roasted Beef on Wasabi pea crush ingredients
Prep 15 mins – Cooking time 4+ hrs
Joint of topside Beef for pot roasting
2-3 Onions – sliced
6-8 cloves Garlic – rough chopped
1 bottle of White wine (good)
¼ pt Beef stock
¼ pt Veg stock
Couple of Bay Leaves
1 Star Anise
Mirin or Sake (Mirin is a sweetened sake or rice wine with a light syrupy texture)
Rice wine Vinegar
150g of fresh peas per person
Roughly chop the onions and half the garlic and put in a heavy roasting pot.
Place the Beef on top and sprinkle the pepper corns and place the bay leaves around it.
Pour over the bottle of white wine, a splash of rice wine and put on the lid of the pot and place into a warm oven (150 oC) for about 4 hrs. (Turn the beef every hour or so)
When ready to serve take beef from pot add a very good splash of soy sauce, blend with your hand blender and thicken the sauce with a roux / GF Thickening granules / cornflour and season to taste.
Slice beef into wedges and serve on a stack of freshly steamed peas that you have lightly crushed with a fork and mixed the wasabi paste and a good splash of Mirin through. Spoon some of the sauce over the top and scatter some sesame seeds over and serve.
